2018 in preview: David Dernley, The Botanist

David Dernley, general manager for The Botanist in West Bridgford, reveals his three business predictions for 2018.

1. I believe we will see an even greater uptake on the current emerging “fine-casual dining” trend. This is where customers order very high end wines but then opt for a relaxed dining choice of shareable snacks or, for us, deli boards to graze on between them. We are starting to see this reasonably regularly, with a lot of these get-togethers now happening mid-week.

2. With a sharpening focus on the nation’s well-being generally, the industry is also becoming a lot more health conscious. I think more places will offer a wider selection of healthy options on the menu, and will put more thought into the nutritional value of all their dishes. There is also an increasing recognition of the need to provide for a wider range of dietary requirements. For example, we will offer a new rice pudding dish in the new year that is tasty, vegan friendly and contains no dairy, so it caters for everyone.

3. Nottingham’s leisure scene is forever expanding and I think we will see some large chains opening in the area in 2018, which is a great sign that the big players see potential in the city. I believe leisure will boost growth in Nottingham and the new venues will create a range of opportunities for unique nights out in all areas of the city.
