Chef recommends… Pan-fried salmon with vegetable noodles

Pan-fried salmon with vegetable noodles

Serves 2

Ingredients:

2 salmon fillets
½ lemon
Salt and pepper
1 courgette
1 carrot
1 red pepper
1 red onion
2 cloves garlic, peeled and chopped
1 red chilli, de-seeded and chopped
½ to 1 cm root ginger, peeled and finely chopped
Sesame oil
Soy sauce

Method:

First, prepare the vegetables. Peel the courgette and carrot and cut them lengthways into thin strips. This is easiest if you have a kitchen mandolin but can be done by hand, or you could use a ‘spiraliser’. Slice the pepper and onion finely.

Put some olive oil into a frying pan on a medium-high heat. Season the salmon and squeeze the lemon over it. Place into the pan skin side down and turn down the heat to a medium.

Pan fry the salmon until just cooked, about 2-3 minutes each side, depending on thickness. Place to one side.

In a pan or wok heat some vegetable oil on a high heat and add the vegetables, garlic chilli and ginger. Stir fry for 3 or 4 minutes until just cooked, then add sesame oil and soy to taste.

Serve onto a plate and place the salmon on top.
