Edmunds backs celebrity chefs on fish campaign

A BIRMINGHAM restaurant has loaned its support to the new campaign by top celebrity chefs to promote the use of lesser known fish.

Edmunds Restaurant in Brindleyplace said it was joining Channel 4’s’ Big Fish Fight by adding unusual fish dishes to its menus.

From today, Edmunds will promote some of the less popular fish species in a special weekly dish that will feature on both its De Jour and A La Carte menus.

The Channel 4 series ‘The Big Fish Fight’ has seen top chefs including Hugh Fearnley-Whittingstall, Gordon Ramsey and Jamie Oliver, joining forces to champion sustainable seafood and help promote some lesser known seafood delicacies.

The campaign has been instigated because concern is growing over diminishing stocks of the most widely consumed species of fish; cod, salmon and tuna.

By popularising some of the lesser known fish, the chefs are hoping the cod, salmon and tuna fishstocks will recover to sustainable levels.

Andy Waters, chef patron of Edmunds, said: “The Big Fish Fight is a fantastic cause that Edmunds is proud to support.  By promoting different fish dishes on our menus such as sardines, coley and mackerel, we hope to encourage our customers to try something new and then take that idea home with them.”
