6 Irish dishes to try this St. Patrick’s Day

This weekend is the perfect opportunity to test your cooking skills and try something a little different. Ditch the takeaways and celebrate St Patrick’s Day over the next few days by cooking these traditional Irish dishes.

Irish Stew
Where else could we begin? Irish Stew is the ultimate dish to celebrate Paddy’s Day with. It should take around an hour and a half to make and you will need to brown onions and meat in oil. Then, add vegetables like carrots and parsnips before adding sliced potatoes and stock before bringing to the boil and allowing it to simmer for around an hour.

Soda Bread
You will enjoy your Irish Stew even more if you have Soda Bread to accompany it. You will need to mix flour, sugar, bicarbonate of soda, baking powder, salt and butter in a large dish and knead after preheating your own to around 190 degrees. In a separate bowl, mix melted butter with three tablespoons of buttermilk and brush the loaf with the mixture. Bake for around 50 minutes.

ColcannonColcannon
Colcannon is a traditional Irish dish of mashed potatoes and cabbage. You will need to boil potatoes in a saucepan and set aside once tender. Add cabbage and boil for five minutes, before also setting it aside. Place two thinly sliced leeks into the pot and cover with milk, before mashing the potatoes. Then, stir in leeks and milk as well as the cabbage. You will then need to make a large well in the centre and add melted butter before mixing well and leaving to cook for 20 minutes.

White Pudding
If you tend to treat yourself to a weekend fry up, replace your black pudding for white pudding for a change. The pudding is similar to black pudding, but does not include blood, only pork, spices and occasionally oatmeal. You will need to get two or three slices of white pudding from a local butcher and all you need to do is fry for a few minutes on each side until golden. Then, add them to your usual fry up.

Potato CakePotato Cake
Another traditional Irish dish, potato cake’s take just over an hour to make. You will need to steam potatoes in salted water until soft before peeling and pushing them through a ricer whilst they are warm and let cool for a few minutes. Then, sift flour and salt over the mixture and make add an egg, nutmeg and a pinch of pepper to a hole in the middle of the mash before forming the mixtures into thick circles. Fry the potato cakes for about 5 minutes each side until golden.

Irish Apple Cake
For an Irish dessert, an Apple Cake is a great option. You will need to grease a square cake pan and separately, cream butter and sugar together until light and fluffy. Add an egg, apple slices, nuts and vanilla before mixing well. Pour the mixture into the greased pan and bake for around 45 minutes until the cake is lightly brown. Serve warm with ice cream, custard or whipped cream.
