Chef recommends… Pan-fried salmon with vegetable noodles (in under 30 minutes)

We all know that feeling of coming home hungry and needing something to eat – right now! Here is one of luxury catering company Dine’s top ideas for a dinner you can put together in under 30 minutes.

Pan-fried salmon with vegetable noodles
Serves 2

Ingredients:

2 salmon fillets

½ lemon

Salt and pepper

1 courgette

1 carrot

1 red pepper

1 red onion

2 cloves garlic, peeled and chopped

1 red chilli, de-seeded and chopped

½ to 1 cm root ginger, peeled and finely chopped

Sesame oil

Soy sauce

1. First, prepare the vegetables. Peel the courgette and carrot and cut them lengthways into thin strips. This is easiest if you have a kitchen mandolin but can be done by hand, or you could use a ‘spiraliser’. Slice the pepper and onion finely.

2. Put some olive oil into a frying pan on a medium-high heat. Season the salmon and squeeze the lemon over it. Place into the pan skin side down and turn down the heat to a medium. Pan fry the salmon until just cooked, about 2-3 minutes each side, depending on thickness. Place to one side.

3. In a pan or wok heat some vegetable oil on a high heat and add the vegetables, garlic chilli and ginger. Stir fry for 3 or 4 minutes until just cooked, then add sesame oil and soy to taste. Serve onto a plate and place the salmon on top.
