A new food and beverage concept is set to launch in Nottingham city centre this month, with entrepreneur Arran Bailey bringing a bagel-focused retail offering to Bridlesmith Gate.<\/p>\n
Arran\u2019s Bagels will open from the former Moda in Pelle unit on the corner of Bridlesmith Gate and Middle Pavement, adding another independent operator to Nottingham\u2019s growing casual dining and grab-and-go market.<\/p>\n
The venture is the latest business from ALB Group managing director Arran Bailey, and is expected to create around 20 jobs.<\/p>\n
It centres on a takeaway-led model, combining premium bagels, coffee and a limited seating offer aimed at capturing regular commuter and city-centre footfall.<\/p>\n
Bailey said: \u201cEvery time we went to New York, we’d come back talking about bagels,\u201d he said. \u201cIt wasn’t really about the bagels themselves. It was how they fit into everyday life. People grab one before work, eat one sat on a bench, pick one up on the way home, get one when they’re hungover. They’re just part of the neighbourhood.<\/p>\n
\u201cWhen we’d come back home it always felt like something was missing. Nottingham has loads of great coffee shops, bakeries and restaurants, but we couldn’t find the kind of bagels we kept going back for.\u201d<\/p>\n
The menu will focus on a streamlined range of classic bagel combinations, including bacon, egg and cheese, alongside salt beef and pickle, with rotating specials and flavoured schmears also planned.<\/p>\n
\u201cWe’d rather do a smaller number of things really well than try to do everything,\u201d Bailey said.<\/p>\n
Product development has taken place in partnership with a local bakery, with the team spending several months refining the bagel recipe before launch.<\/p>\n
\u201cWe didn’t want to just buy something off the shelf. We’ve been ridiculously picky about everything. Texture, chew, crust, size, seeds, the lot. It\u2019s taken longer than we expected because the bagel is the whole point. If you get that bit wrong, nothing else matters.<\/p>\n
\u201cWe’re not trying to build a massive brunch place or somewhere designed just for Instagram. We want Arran’s to become part of people’s routines. If someone grabs breakfast here three times a week, that’s a bigger compliment than somebody travelling across the country to visit once.\u201d<\/p>\n
