Counter Manchester, the latest restaurant from Open Restaurant Group, will become its first opening in Manchester city centre when it opens its doors on Monday, November 9.<\/span><\/p>\n

Led by acclaimed chef Andrew Sheridan, Counter will be located in Manchester\u2019s Island Building on John Dalton Street, with 60 covers.<\/span><\/p>\n

The opening marks Open Restaurant Group\u2019s ninth restaurant to date and its second site in Greater Manchester, following the launch of Arcadian in Didsbury last month.<\/span><\/p>\n

At the heart of the restaurant will be a four-to-five-seat chef\u2019s counter, placing guests directly at the pass for an up-close view of the kitchen in action.<\/span><\/p>\n

The interiors will feature four-metre elm trees, curved booth seating and a brass wine display, creating a setting designed to make atmosphere and experience as integral to the visit as the food itself.<\/span><\/p>\n

Andrew Sheridan brings his internationally-inspired approach to Counter, building on a career that has seen multiple restaurants under his direction feature in the prestigious Michelin Guide.<\/span><\/p>\n

At Counter he challenges convention by exploring what British cooking can be, placing exceptional British produce at the heart of a menu shaped by the flavours, ingredients and techniques of cuisines from around the world.<\/span><\/p>\n

The menu puts this philosophy into practice with dishes that combine unexpected ingredients and inventive flavour pairings.<\/span><\/p>\n

Highlights include the Beef Tartare Pressed Croissant, pairing aged beef with a crispy pressed croissant, smoked oyster mayo, wasabi and pickled shallot; the Tuna Pizza, combining a crisp sesame base with raw tuna, avocado, jalape\u00f1o and smoked soy; and the Scallop Hash Brown, featuring crispy potato, scallop brown butter satay, green chilli and lime.<\/span><\/p>\n

From the grill, guests can expect the Satay Spatchcock Chicken, served with peanut satay, fermented chilli, coconut, burnt lime and crispy shallot, alongside Turbot Steak, a bone-in cut finished with brown butter, green chilli and preserved lemon.<\/span><\/p>\n

Paying homage to Manchester, the dessert menu features two distinctly local creations. Vimto 1908 is a nod to the city’s iconic soft drink, bringing together Vimto jelly, baked yoghurt, vanilla sponge, blackcurrant, raspberry and custard.<\/span><\/p>\n

Meanwhile, The Manchester Glory layers vanilla custard, raspberry, coconut ice cream, banana, toasted coconut, whipped mascarpone and cherry for a playful finale inspired by the city.<\/span><\/p>\n

Drinks will be led by Jake Nutt, who returns to Open Restaurant Group following a stint at two-Michelin-starred Ynyshir in Wales. Chef and co-founder, Andrew Sherdian, said: \u201cFor us, great cooking isn\u2019t about sticking to rules or defining food by where it comes from. It\u2019s about taking the best flavours, textures and ingredients from around the world and bringing them together in ways that surprise people.<\/span><\/p>\n

\u201cWe start with great produce, take inspiration from different food cultures and have fun with it, creating dishes that are bold, playful and full of flavour.<\/span><\/p>\n

\u201cManchester is creative, loud and full of character, and we wanted Counter to reflect exactly that. It\u2019s a place where great food meets a sense of occasion, without ever taking itself too seriously.\u201d<\/span><\/p>\n

He added: \u201cWhether you\u2019re joining us for lunch or dinner, we want Counter to feel like a natural part of the city, somewhere you come back to time and time again.\u201d<\/span><\/p>\n

Last month Open Restaurant Group bought Liverpool\u2019s Wreck Bistro from Gary Usher, marking its second acquisition from the Elite Bistros founder following its deal for Hispi, in Didsbury, from Usher earlier this year.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"
