Indie pizza chain set to open second Brum restaurant

Birmingham city centre could be about to get a second Rudy’s Pizza venue, according to documents seen by TheBusinessDesk.com.

Rudy’s, which already has an outlet at 9-10 Bennets Hill in the city, has made a licence application for 6 Brindleyplace – the former home of fine dining restaurant Maribel.

Rudy’s serves “authentic Neapolitan pizza”. It has 15 pizzerias – mainly across the North, with one in London’s Soho.

The company was founded in 2015 by Jim Morgan and his partner Kate Wilson.

A statement on the firm’s website says: “For us it’s all about the pizza. Just like in Naples, our dough is made on site every day, takes 24 hours to double ferment and just 60 seconds to cook. It is soft, light and floppy… so fold for strength or tuck in with a knife and fork. Enjoy.”
