Brian Hughson appointed head chef at 20 Stories

Brian Hughson has been announced as the new head chef at Manchester’s 20 Stories restaurant.

Liverpool-born Brian has more than 25 years of culinary experience.

Starting his career in May 1998, his expertise and knowledge have taken him on a whirlwind journey leading to working in world-renowned and recognised venues across London, Dubai and Manchester.

“I’m not here to try and re-educate anyone,” he said.

“Diners in this city are far more discerning than they were 20 years ago. I have some big boots to fill here at 20 Stories but I’m really excited about the role.”

Brian’s first steps in the kitchens of Manchester began shortly after the opening of Mash and Air in 1997 and, thereafter, he quickly worked his way up through some prestigious establishments.

Notably, Brian worked with the likes of Henri Brosi at The Grill at The Dorchester, Gary Rhodes at Rhodes W1, The Savoy Grill with Gordon Ramsay and The Belvedere with Marco Pierre White, to name but a few establishments throughout his career.

Deepening his knowledge further, Brian’s culinary repertoire flourished as he took to private functions, even catering for Her Majesty The Queen and The Prince of Wales.

Classically-trained, Brian has promised that his style at 20 Stories will be very much about “Good honest food”.

He said: “20 Stories is an iconic restaurant at the heart of a city where the food scene has blossomed over the last few years. Manchester has become a destination for diners with high standards and the city has responded with a number of fantastic restaurants.

“I love it here. The restaurant scene in the city is growing and it really keeps you on your toes.”

Brian has promised that 2019 will see significant changes at 20 Stories, all designed to keep the highest restaurant in the city at the top of its game.

He added: “My role is an important one – to lead the fantastic team here at 20 Stories and make sure we do things in the best way possible.”

Brian has already started work on site at 20 Stories restaurant, which is based at No1 Spinningfields in the city centre.

Last November, fellow Liverpudlian Aiden Byrne left as chef director at 20 Stories.

Later that month he confirmed his plans to relaunch Manchester House, which he had previously left to join 20 Stories.
