Bistro Qui? opens its eighth restaurant in city

LIVERPOOL-based restaurant operator Bistro Qui? is celebrating its ongoing growth following the successful opening of its eighth restaurant Chicha.

The firm, has recently added the Peruvian themed restaurant to its portfolio which has grown stealthily since being established in 2003.

Serving Peruvian small plates, Chicha on Bold Street in Liverpool is open daily for lunch and dinner.

Head Chef Bart McHugh has created a menu of fresh and seasonal ingredients with signature dishes such as Lomo Saltado, Ceviche and Quinoa and Avocado Salad. Popular Peruvian ‘Inca Kola’ and the traditional purple corn brew ‘Chicha Morada’ are also available on the extensive and authentic drinks list.

Owned by family members Mark Friend and Stephen Slater, Bistro Qui? is the company behind Liverpool’s popular restaurant’s Bistro Pierre, Bistro Jacques, Bistro Franc, The Hub Alehouse and Kitchen, Button Street Smokehouse and The Refinery  as well as Shrewsbury’s own Bistro Jacques.

Since it was established Bistro Qui? has seen annual turnover increase from £750,000 to in excess of £9m. Due to its success and great presence within Liverpool city centre, the firm now plans to focus its expansion across other cities in the North and Midlands regions.

An undisclosed deal with Royal Bank of Scotland has provided Bistro Qui? with funding to support the opening and refit of the new restaurant.

Friend, Director of Bistro Qui?, said: “The restaurant scene is highly competitive at the moment which has encouraged us operators to improve across the board- this is great news for the customer and exciting times for restaurateurs. As the demand for fresh and sometimes diverse food increases, the more opportunities arise for openings in different locations. Great days for diners and restaurants alike.

Steve Jackson, relationship manager at Royal Bank of Scotland, said: “Mark and Stephen have built a successful portfolio of restaurants and I am pleased that we are able to support them as they continue to grow and expand their operations.

“The duo have a great vision and the bars and restaurants they have created are very popular in the area.  Their ability to spot opportunities in the local market and to deliver a first class food offering has enabled them to develop a successful business.”
