Japanese-themed restaurant unveils plans to develop three new dining experiences

Japanese restaurant and bar, MUSU, has unveiled a transformation into the MUSU Collection, marking a major expansion of the Bridge Street site, with three distinct dining experiences.

The team behind the restaurant is constructing a purpose-built facility on the lower ground floor, set to open in quarters two or three in 2025. 

This new space will house MUSU Miyabi, led by new Chef Patron, Steven Smith, and MUSU Theatre of Omakase, helmed by Executive Sushi Chef, Andre Aguiar. 

First to launch will be KAJI which is set to arrive this October.

Steven Smith, formerly of the Freemasons at Wiswell, is joining as Chef Patron of the MUSU Collection. 

Steven has been celebrated with numerous accolades, including Chef of the Year, Best Food Pub at The Great British Pub Awards, AA Pub of the Year, and achieving three AA Rosettes for his outstanding culinary skills.

His innovative approach and dedication to refinement will drive MUSU Miyabi and the entire Collection forward.
