New restaurant in Hardman Square

A popular restaurant chain is moving into Manchester’s business district.

Bill’s Restaurant & Bar has from its current site in John Dalton Street in Spinningfields.

The new 177 sqm dining venue in Hardman Square accommodates up to 96 covers, featuring booths, sharing tables, a co-working space and a bespoke bar area.

There is also external seating for 26 covers.

The Spinningfields’ restaurant and bar features the brand’s redesign, which includes modern décor, vibrant colours, velvet seating and chandeliers.

The drinks menu features six new cocktails exclusively for Manchester, for something different opt for a Manchester Tea Party, which combines earl grey syrup, elderflower liqueur, cinchona bark with gin and sparkling water, or a Wildflower Margarita, a concoction of kaffir lime, hibiscus, nori, agave and tequila.

The gin menu, exclusive to the site, uses Cheshire sourced Three Wrens gin, and features three bespoke G&T combinations, Apple Crumble Gin served with Fever-Tree Elderflower Tonic, Rhubarb Gin served with Fever-Tree Ginger Ale and Original Dry Gin with Fever-Tree Tonic.

Founded by Sussex greengrocer Bill Collison, Bill’s has always stayed true to its roots.

He said: “Spinningfields is the hottest destination right now so we’re so excited to have found our perfect location here, both with indoor and outdoor space.

“We’ve transformed the interior making it much more vibrant for our guests, we are really excited for them to experience this new Bill’s vibe and of course, showcasing our stunning new menu that encapsulates healthy, seasonal and indulgent dishes all day and into the night!”

The new Bill’s Spinningfields is open Monday – Thursday 7am – 11pm, Friday 7am – 1pm, Saturday 8am – 1am, and Sunday 9am – 10.30pm.
