Tomlinson targets Christmas sales

A FOOD entrepreneur has returned to Manchester’s Spinningfields for the festive season with another pop-up shop.

Carla Tomlinson traded from the site as Penelope’s Ice Cream in the summer and is now selling home made “comfort food” as Penelope’s Kitchen.

Inspired by a previous stint living in New York, her aim is to source all ingredients from independent Manchester suppliers.

She said: “A key focus for me is sourcing local ingredients from independents across the city and I am proud to say that 95% of my ingredients are local.

“In New York everything in the food industry is about keeping it local and using the very best ingredients with your own added creative flare and this is my aim here with Penelope’s Kitchen.”

Ms Tomlinson has been assisted by the Prince’s Trust and Royal Bank of Scotland in Manchester.
