Aldo Zilli puts white truffles on the menu

FOR the next week, San Carlo’s Birmingham restaurant will be serving one of the world’s most expensive delicacy thanks to celebrity chef, Aldo Zilli who brought the truffle all the way back from his birthplace in Italy.

The chef – who was born in Abruzzo – cooked up a treat for a few select diners last week, giving them the first taste of the exclusive five-course truffle menu.

Executive consultant chef for the San Carlo group, Aldo Zilli said: “Many have tried to describe the aroma and taste of the white truffle – the Romans believed it was an aphrodisiac, maybe it is, it’s intense and earthy and the smell of it can fill a room, but you have to experience it yourself as there’s nothing like it.” 

Prized for their aromatic qualities and unique taste, the truffles grow deep in the soil under trees and can only be harvested for around two months a year. 

Aldo’s edible buried treasure was discovered by professional truffle hunters using specially trained dogs and is worth up to £4,000 per kilo.

Having personally selected the rare white winter truffle in Abruzzo, Aldo returned to Birmingham to serve the customers of the Temple Street restaurant a new limited-time only menu.

San Carlo’s truffle menu includes lobster and truffle risotto, steak tartare with poached egg and shavings of fresh white truffle and tagliolini with truffle butter and shavings. The exclusive menu will also offer a carpaccio and burrata with shavings of truffle and turbot with a truffle, prosecco and cream sauce.
