TV chef hopes to score with Football Museum restaurant

TV chef Frank Bordoni is the latest name to try and find a recipe for success of the top-floor restaurant in Manchester’s Urbis building – which will soon reopen as the National Football Museum.
Mr Bordoni is food director of Kaleido – a new contemporary British restaurant and cocktail bar at the building – and will open its doors to diners on July 6.
Operated by Kudos, which is part of The Crown Group, Kaleido will employ around 50 staff, at the restaurant and cocktail bar.
Located on the 5th and 6th floors of the National Football Museum, within the Urbis building, Kaleido will serve British cuisine using high quality locally-sourced produce.
Kaleido’s predecessors. Le Mont and more recently The Modern, failed to establish themselves in Manchester – as customers eschewed formal fine-dining concepts for more casual-based eateries.
Mr Bordoni, who trained in the kitchens of the Roux brothers and Brian Turner, will also be joined by Paul Riley, originally from Rochdale, who will be the restaurant’s executive head chef.
Mr Riley has worked at some of the UK’s top restaurants, including ‘Nutters’ in Lancashire and Bristol’s ‘Thistle’ Hotel, which achieved its first AA Rosette under his guidance as head chef.
Mr Bordoni, a regular on TV food channels, said: “This is a stunning Manchester landmark building and we are delighted to be part of what is set to be a fantastic attraction not just for the city, but for the UK.

To complement the food offering, there will be a destination cocktail bar on sixth floor.
