Gastro star Novelli to launch at Liverpool hotel

CELEBRITY French chef Jean-Christophe Novelli has entered into a partnership with DoubleTree by Hilton & Spa in Liverpool and management company Interstate Hotels and Resorts to launch his new brasserie.
It will be branded Jean-Christophe Novelli at Michelle – a first for the chef – when the hotel officially opens in April.
For the five out of five, AA Rosette and multi Michelin award-winning Novell will mark a return to the UK restaurant sector with his outlet.
The 120-cover restaurant, which will also serve the lounge, conference rooms and banqueting areas for numerous diners, will be spearheaded by Novelli.
“I’ve had a few years away from being involved in restaurants to concentrate on my young family, cookery school and chef’s academy, however I’ve always kept my eye out for the right opportunity to come along,” he said.
“As soon as I saw the restoration, high quality and grandeur of DoubleTree by Hilton Liverpool, I knew I could feel proud to put my name to what promises to be a really exciting restaurant in beautiful surroundings.”
“The dream and the goal is to create the most talked about and respected brasserie in the North West and I’m already experimenting with ideas, themes and concepts and developing a bespoke menu from scratch for Jean-Christophe Novelli at Michelle.”
A team of experienced chefs and front of house staff are being recruited by Novelli to help implement the vision for the brasserie.
The final Jean-Christophe Novelli at Michelle team will enter a period of intense training and development both on site at DoubleTree by Hilton Liverpool and at Novelli’s award-winning Novelli Academy in Hertfordshire.
General manager at DoubleTree, Terence Southward, said: “Jean-Christophe is one of the best chefs of his generation and it seems only right that such a prestigious building should be partnered with such a fabulous chef.”
DoubleTree by Hilton Hotel & Spa Liverpool has undergone a complex restoration.
The former home of Liverpool’s Conservative Club, DoubleTree fuses two Grade II listed buildings, restoring ornate original features from the 19th century. In addition to Jean-Christophe Novelli at Michelle restaurant, the new development will feature upscale bedrooms, executive lounge, opulent spa and large wedding and event spaces alongside conference facilities.
