Richmond cheesemaker on a roll

LACEY’S Cheese has secured a contract to supply Sainsbury’s stores nationwide and is looking to add other supermarkets and independent retailers to its growing client list.

The Richmond-based cheesemaker, which was founded last year, has also been chosen by Michelin Star restaurant The Star Inn at Harome to create a cheese in the hotel’s colours, which will be sold in its deli.

Founder Simon Lacey said that the recent award of a key piece of food manufacturing accreditation – Safe and Local Supplier Approval (SALSA) – has made the firm better placed to supply large retailers and multiples.

Achieving the status requires considerable effort and Lacey’s was helped by the Regional Food Group (RFG), which offered technologist Kevin Vaughan as a mentor.

He said: “SALSA is a very beneficial accreditation for a company to have, especially for smaller producers.

“The system we implemented at Lacey’s Cheese factory is ideal and tailored to the factory making it straight-forward to audit.

Mr Lacey said: “With RFG providing extra resources, expertise and time dedicated to our cause, our SALSA accreditation has made a huge difference to our bottom line.”
