New Binks Yard menu puts a savoury twist on pistachio craze

Binks Yard, located along Nottingham’s canal side, has updated its menu for spring, with a noticeable focus on seasonal ingredients and international flavours.

Among the changes is the inclusion of pistachios in savoury dishes, reflecting a broader food trend that’s gained momentum in recent months.

Pistachios, which have featured heavily in desserts and drinks like lattes and chocolates, are being reimagined at Binks Yard in dishes like the new Mortazza pizza.

The pizza combines truffle crème fraîche, mortadella, burrata, and crushed pistachios, bringing a richer, crunchier element to a classic format.

Lewis Thornhill, executive chef at Binks Yard said: “We wanted to embrace seasonal ingredients excitingly and innovatively, and pistachios are having a huge moment right now. We’ve seen them in desserts for years, but we’re bringing them into savoury dishes where they add an unexpected hit of flavour and a satisfying texture. The Mortazza pizza is delicious and indulgent, and we’re excited to see how our guests respond.”

Other updates include new fillings for the venue’s signature shawarmas, Creole salmon and bulgogi bee, alongside the existing chicken version.

Small plates have also been revised, with additions like Thai crab cakes and crispy beef with ssamjang sauce joining returning items such as Goan lamb kofta and spiced hummus with flatbread.

The menu also welcomes the return of the burrata salad and the introduction of a spicy buffalo chicken mac ‘n’ cheese.

For dessert, alongside staples like sticky toffee pudding, a poached pear with saffron, cardamom, and pistachio white chocolate rounds out the offering.

Thornhill said: “Our dishes highlight the best seasonal ingredients while staying true to our signature bold flavours. We’ve taken inspiration from global cuisines, incorporating fresh, vibrant ingredients that reflect the lighter, brighter days ahead. Whether it’s enjoying the surprising flavours of our Mortazza pizza, the exciting new twists on our shawarmas, or the decadent dessert options, we want our guests to experience something truly special this season. We also know how important it is to offer variety and convenience, which is why we’ve expanded our express lunch menu and introduced new small plates that are perfect for sharing.”
