Japanese-inspired restaurant chain plans Leicester and Nottingham venues

Maki & Ramen, the Japanese sushi and ramen restaurant chain, is lining up a Nottingham venue.
The operator will take the former Wildwood unit on King Street in the city and will open in July.
Maki & Ramen was founded by Teddy Lee in 2015 and is headed up by Michael Salvador. It currently has nine restaurants in its portfolio. A Leicester restaurant in the Highcross shopping centre is slated to open in June.
Lee’s journey began as a chef, studying in a sushi academy in Tokyo, with an aim to introduce high-quality ramen and sushi to local communities.
He said: “We’re so excited to be bringing Maki & Ramen to Leicester. Highcross is the perfect location for us to share our passion for good traditional Japanese dishes and build a vibrant community around great food.
“Our mission has always been to serve the very best ramen and sushi, and we can’t wait to welcome Leicester diners to experience it first-hand. Standout dishes such as our rich Tonkotsu ramen, delicate sashimi platters, and flavour-packed sushi rolls are sure to delight food lovers across the city.”
Wildwood closed its King Street, Nottingham venue in May last year, citing the “underperformance” of the venue.
