The North looks tasty for casual Indian dining concept

A RESTAURANT concept that pairs Indian street food with craft beer has opened its doors in Manchester as part of its plans to dish up casual dining in the North.

Following the success of its first restaurant in Leeds, Bundobust was keen to establish itself in the North of England and chose Manchester’s Northern Quarter as the second location for its fast-casual dining concept.

A joint venture between Bradford-based Mayur Patel who owns Drighlington’s Prashad and the owner Sparrow Bier Café Marko Husak, Bundobust offers a range of authentic Indian food coupled with craft beer – handpicked to complement the dishes.

Co-founder of Bundobust, Husak said: “It’s not your typical Indian cuisine, its heavily influenced by what’s going on in India and the food is all paired with beer so essentially, it’s the nation’s favourite cuisine with the nation’s favourite drink, put together in a unique way.

“When people eat out they want to taste different things, people have had chicken korma and shish kebab shoved down their throat for the last 30 years and I think we need to introduce England to different, authentic dishes that people actually eat in India.”

Okra Fries seasoned with black salt and mango powder, a medley of samosa pastry, chickpeas, potato, tamarind chutney, onion, yoghurt and tumeric noodles and a spicy mashed potato ball coated in gram flour and fried, served in a brioche bun with chutney and hot green chillies are just a few of the snacks on the menu at the restaurant.

The new Bundobust restaurant also boasts 14 keg beers along with two specially designated cask lines which will be reserved for beers from Manchester breweries and rotated regularly.

After settling into Manchester, Bundobust will be looking at site number three to launch within the next year.

Husak said: “We were thinking about London, but it would be nice to keep it all Northern and hit the northern big cities, logistically it would help to keep all our sites close together as well.”
