A Cut above your average butcher

Farmison & Co, the sustainable online meat retailer, is opening a unique experiential butchers’ shop that claims to be as much an experience as a shop.

The shop, called Cut by Farmison & Co, will open on Wednesday 7 July at the company’s Bondgate Green head office in the historic city of Ripon, North Yorkshire.

The outlet has been designed to showcase the crown jewels of Yorkshire heritage breed meat and allow customers to select from Farmison & Co’s extensive online range and collect within an hour of placing an order. It will be open seven days a week, allowing shopper to select from Farmison & Co’s wide range of heritage breeds alongside Michelin star recipe card inspirations devised by Farmison & Co’s in-house Michelin starred chef, Jeff Baker.

Unlike any other butchers, it will feature a glass wall so shoppers can watch the master butcher at work. They’ll also be able to take advantage of a bespoke butcher’s service as well as in-store tastings and sampling of new products.

Customers will also be able to purchase pre-packed best sellers and meals from the firm’s exclusive Saucepan Ready range and a pick-and-mix skewer service for the summer barbecue season.

Cut is the pilot programme for the business which last year saw strong growth, for what it hopes will become a concession in high-quality food retailers here in the UK and overseas.

John Pallagi co-founder and CEO of Farmison & Co said: “The profile of Yorkshire’s meat is only growing as chefs and home cooks recognise the rich heritage of traditional husbandry around Ripon, with the pastures in the Dales and North York Moors giving the meat unique qualities – much like the principle of ‘terroir’ in wine.

“And because of the extensive range of heritage breeds that make up our online better meat offer, we reckon if you were to display it in a traditional shop, you’d have to have the longest butcher’s counter in the world.

“And while we think Cut, in time, could grow to be a stop on the Yorkshire tourist trail, we know locals will appreciate the convenience of click and collect and the advice from our expert team when they pop in.”

This is the latest development for Farmison & Co which was created in 2011, with the mission to encourage people to eat better meat and savour the flavours of the best its farmers produce. Since then it has grown to employ more than 100 people in Ripon and supports up to 30 farms across Yorkshire and the north.

The firm specialises in heritage breeds beef, including Red Poll, Aberdeen Angus, Shorthorn, Galloway, Dexter and Sussex that allow farmers to use long-established conservation methods and recently helped revive a rare cattle breed.
