Chef recommends…perking up your packed lunch with a Thai chicken salad sandwich

Are you fed up of the same old soggy sandwiches? Here’s some ideas for a packed lunch with a tasty twist, courtesy of the chefs at event planning business Dine, based in Roundhay.

Thai Chicken Salad Sandwich

Makes 2

Ingredients

Large handful shredded white or red cabbage
Large carrot, grated
Juice of 1 lime
½ tsp soy sauce
½ tsp vinegar
½ tsp fish sauce
½ baguette
Tablespoon mayonnaise
150g cooked chicken, shredded or finely chopped
Tablespoon fresh coriander, chopped
Tablespoon mint, chopped
1 red chilli, deseeded and chopped (or ¼ tsp dried chopped chilli)
1 clove garlic, crushed
Tablespoon peanuts

1. In a bowl, mix together the lime, soy, vinegar, fish sauce, garlic and chilli.

2. Mix together the cabbage & carrot and add to the dressing. Mix well.

3. Slice the baguette lengthways and, using a spoon, scoop out some of the inside to form a hollow. Spread mayonnaise on both sides and spoon the cabbage mixture into the bottom half.

4. Add the chicken and then sprinkle the peanuts, coriander and mint on the top. Slice in half to serve.

Top tip: If you want to make this sing, a tablespoon of chopped papaya in the chicken is amazing!
